Salmon with Mango and Papaya

 Ingredients

  • 3 pieces salmon
  • salt and black pepper to taste
  • 1 tablespoon sunflower or oil of your choice
  • 1 clove garlic, peeled and minced
  • 1 (1/2 inch) piece fresh ginger root, minced
  • 2 mangoes - peeled, seeded, and diced
  • 1 papaya peeled, seeded and diced
  • 2 tablespoons balsamic vinegar
Directions
  1. Sprinkle salmon with salt and pepper.
  2. Cook until no longer pink and juices run clear. Remove from heat, set aside, and keep warm. I cooked them for about 5-6 minutes on each side.
  3. Heat oil in a medium skillet over medium heat, and saute garlic for about 1 minute. Mix in ginger, papaya and mangoes, and cook 3 to 4 minutes, until fruit is tender. Pour in the balsamic vinegar. Season with salt and pepper. Spoon mixture over the salmon to serve.

Ohhhhhh Staci even at 9:30 in the morning that looks SOOOOOO Good...did it taste as good as it looks?

Do you like fish? Do you like cheese? You HAVE to try this recipe:

Broiled Tilapia Parmesan

If it wasn't so high in calories we'd eat it every day in my house!!!
